Managing Metabolic Health

Here’s a fun, glucose-friendly recipe to try out:

 Kung Pao Chicken

Here is what you’ll need: 

·      1 pound chicken (cubed)

·      ½ yellow bell pepper (chopped)

·      ½ red pepper (chopped)

·      ½ orange pepper (chopped)

·      1 cup peanuts

·      1 tbs corn starch

·      3 cloves fresh garlic

·      2 tbs sesame oil

For the Sauce

·      2 tbs liquid aminos

·      2 tbs chili paste

·      2 tbs honey

·      3 tbs balsamic vinegar 

·      ¼ cup chicken broth 

Start sprinkling the chicken with the cornstarch while the sesame oil and garlic heat in the skillet. Add the chicken. Once the chicken is cooked, add the peppers and sauce ingredients. Let the sauce simmer until it thickens. Now, add the peanuts.
