Celebrating National Nutrition Month with a Delicious Chicken Stir Fry 

As we celebrate National Nutrition Month, what better way to nourish your body than with a wholesome and flavorful meal? This chicken stir fry with a sweet tangy garlic sauce served with fragrant Jasmine rice is not only delicious but also packed with nutritious ingredients like chicken, green beans, snap peas, bell peppers, onions, and mushrooms.

  • Ingredients: 
  • – 1 lb chicken breast, sliced into strips
  • – 1 cup green beans, trimmed
  • – 1 cup snap peas
  • – 1 bell pepper, sliced
  • – 1 onion, sliced
  • – 1 cup mushrooms, sliced
  • – 2 cloves garlic, minced
  • – 1/4 cup soy sauce
  • – 2 tbsp honey
  • – 1 tbsp rice vinegar
  • – 1 tsp sesame oil
  • – 1/2 tsp ginger, grated
  • – 2 bags of Success Boil-in-Bag Jasmine Rice
  • – Sesame seeds for garnish 

 Instructions:

 1. In a small bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, garlic, and ginger to make the sweet tangy garlic sauce. Set aside.

2. Heat a large skillet or wok over medium-high heat. Add a bit of oil and sauté the chicken strips until cooked through. Remove from the skillet and set aside. 

3. In the same skillet, add a bit more oil and stir fry the green beans, snap peas, bell peppers, onions, and mushrooms until slightly tender. And at the same time prepare your Success Jasmine rice per package instructions.

4. Return the cooked chicken to the skillet and pour the sweet tangy garlic sauce over the chicken and vegetables. Stir well to coat everything evenly.

5. Cook for another 2-3 minutes until the sauce thickens slightly and everything is heated through.

6. Serve the chicken stir fry over a bed of Success Boil-in-Bag Jasmine rice and garnish with sesame seeds.
