Mediterranean Stuffed Peppers

Colorful and delicious Mediterranean Stuffed Peppers with Success Tri-Color Boil-in-Bag Quinoa – a healthy and flavorful recipe that will satisfy your taste buds! 

Mediterranean Stuffed Peppers Recipe

Ingredients: 

– Success Tri-Color Boil-in-Bag Quinoa (1 bag)

– 3 large bell peppers

– 1/2 cup chickpeas

– 2 tomatoes, diced –

– 2 mini cucumber, diced

– Mediterranean feta cheese, crumbled

– Tzatziki sauce 

Multi-Colored Peppers Instructions: 

1. Preheat your oven to 350°F (175°C).

2. Slice the peppers in half (I sliced my lengthwise)

3.Spray the peppers with olive oil and sprinkle with salt

4.Bake for 15 minutes

5. Cook the Success Tri-Color Boil-in-Bag Quinoa according to the package instructions. Once cooked, set it aside to cool. 

6. While the quinoa is cooling, prepare the other ingredients. Dice the tomatoes and cucumber, and crumble the Mediterranean feta cheese. 

7. Spoon the quinoa into each pepper until they are mostly filled. 

8. Top with remaining ingredients—chickpeas, cucumbers, tomatoes, feta

9. Serve the Mediterranean stuffed peppers with a drizzle of tzatziki sauce on top. 

10. Enjoy your delicious and colorful Mediterranean stuffed peppers! 

Note: Feel free to adjust the ingredients and quantities to suit your taste preferences. You can also add some herbs and spices like oregano, basil, or garlic powder to enhance the flavors even more.
